Olive oil is the symbol of many important socio-geographic markers. It is a symbol of the Mediterranean, of health and gastronomic delight, long known for its healing properties. And yet each oil, beyond that shared dimension, is specific. Dušević olive oil is a warm yellow-green colour, dense, with a pleasant aroma of olive fruit, freshly cut grass and apple, and a harmonious taste with fruit notes, gentle bitterness and moderate pungency. It pairs excellently with the aromas of food and can enrich any gastronomic offering. It is a superb seasoning for green salads, vegetables, all kinds of seafood and meat — delivering top-tier enjoyment, rich in nutritional value and aromatic notes.
Building on our ancestors' tradition — diligent labourers who tended the land carefully — particular attention was paid to olive growing and viticulture, an ongoing challenge with the goal of absolute quality and the satisfaction of those who enjoy our olive oils, wines and liqueurs. Since 1985, alongside the native varieties Oblica and Drobnica (locally: "sitnice"), and with the help of the great expert and olive enthusiast, the late engineer Mladen Vojković, we were among the first to plant 40 trees of the Italian varieties Leccino, Pendolino, Cuco and Nocellare. Although we now have over 20 olive varieties across 500 trees in our cove, five varieties stand out: from these we make our well-known single-varietal oils on sale. They are the native Oblica and Drobnica, plus Coratina, Leccino and Levantinka. Among the others we can highlight Bjelica, Pendolino, Cuco and Buža. There is also a sixth oil — a blend called "Selekcija" — combining several single-varietal oils to our own recipe, with respect for the principles of food pairing, creating a unique oil suited to every dish.
Oblica is a top-category olive oil — a warm golden-yellow colour, dense, with a pleasant aroma and taste of ripe olive fruit, gentle fruity bitterness and moderate pungency with a pronounced sweetness. It pairs excellently with the aromas of food and can elevate any gastronomic offering — ideal with seasonal salads, boiled vegetables, fish, meat and medium-aged cheeses.
Drobnica is a top-category olive oil — a warm golden-yellow colour, dense, with a pleasant aroma and taste of ripe olive fruit, pronounced pungency and a fine, gentle bitterness. Sweetness is also somewhat present. Recommended with grilled fish, meat and pasta, as well as various green salads, all of which it enriches.
Leccino is another top-category oil — harmonious, fresh and light, of excellent quality, deep yellow-green in colour, with the aroma and taste of olive and aromatic herbs and gentle pungency. Thanks to its fruity freshness and lingering aroma, it accentuates the delicacy of raw fish, scampi and prawns. It pairs wonderfully with grilled fish and cuttlefish and fresh salads. Ice cream, panna cotta and parfaits of vanilla, forest fruits and strawberry, cheesecake and sheep curd — with just a few drops of Leccino they all become a wonderful, elevated dessert.
Levantinka is a top-category olive oil — a warm golden-yellow colour, dense, with a pleasant aroma and taste of ripe olive fruit, pronounced pungency and a gentle aroma. Just because of that it pairs excellently with Mediterranean cuisine (salted and marinated fish, shellfish, crustaceans, boiled and grilled fish, lightly cooked vegetables and fresh salad).
Coratina is the oil of the variety of the same name, in the intense category — with the fruitiness of cherry tomato, freshly cut grass and artichoke. It pairs best with red meat, game and salads of broad beans, lentils and chickpeas.
Selekcija is another piece of gold among top-category oils. Crafted as a blend of several varieties to a unique recipe, it is a warm yellow-green colour, dense, with a pleasant aroma of olive fruit, freshly cut grass and apple, with a fruity-bitter taste and moderate pungency. It is made to enrich any gastronomic offering, from salad to meat and seafood.
Beyond all those, one oil is truly special. As we are always exploring new possibilities, we arrived at the perfect cohesion of oil and salt. We combined our oil with the famous sea-salt flower from nearby Nin to create an enriched oil that, once shaken, sparkles with tiny salt crystals. We named it after Mladen's two grandsons — Donat & Mikula.
Donat & Mikula is a warm golden-yellow oil with a pleasant aroma and taste of half-ripe olive fruit, gently fruity-bitter, with moderate pungency and pronounced sweetness. Like all our oils, it adds value to the food it accompanies, forming an ideal pairing for even the most demanding gourmets. Before use, shake gently to lift the settled salt-flower crystals from the bottom of the bottle.
